¼ cup butter
1 onion chopped
10 cups spinach fresh, will cook down to one cup, or 10 oz frozen spinach
3 cups vegetable broth
1½ cups heavy cream
salt to taste
pepper to taste

Directions:
Directions:
Place chopped onions in a large pot, sauté in butter without letting it turn brown.
Add spinach and stir until spinach has thawed , if using frozen or until fresh spinach has wilted.
Simmer for 1 minute.
While stirring, add broth and cream.
Let boil, then simmer for a few minutes.
Add salt, pepper and nutmeg to taste.
Serve with half egg on top.
