1 cup (4 oz.) shredded cheddar cheese, divided
1 unbaked pastry shell (9")
1 cup diced cooked chicken
1 pkg (10 oz.) frozen chopped spinach, thawed and squeezed dry
1/4 cup onion, finely chopped
2 eggs
3/4 cup milk
3/4 cup mayo (do not use light in this recipe)
1/4 tsp. salt
1/8 tsp. pepper

Sprinkle 1/4 cup cheese into pastry shell. Combine chicken, 1/2 cup spinach, onion and remaining cheese (save remaining spinach for another use). Spoon into pastry shell. Whisk eggs, milk, mayo, salt and pepper. Spoon over chicken mixture. Bake at 350º for 40-45 minutes or until knife inserted near the center comes out clean. Let stand for 15 minutes before cutting. Serves 6.
