4 oz Sharp Orange Cheddar coarsely grated: 1 cup
2 Jalapeños seeded and finely chopped
2 Scallions

Heat oven to 425º
Prepare the basic scones with the following changes: Cut in the butter then fold in the cheese, jalapeños and scallions. On a lightly floured surface, shape the dough into an 8 inch round. Using a 2 1/2 inch round cookie cutter. Cut the dough in circles and place on the prepared baking sheet. Reshape and cut the scraps. Brush the tops with 1 tbsp heavy cream and bake until golden brown. 10-12 minutes
