For Chile
1 Pack of California Chile Pods (This chile is not very spicy)
5 Garlic Cloves
1 ½ teas Salt (or less if desired)

For Pozole
1 lb Pork (boneless) cut into cubes
2 lbs Pork Shoulder (with bone)
5 Garlic Cloves (minced)
1 Whole White Onion (peeled)
1 ½ teas Salt (Optional)
1 Can Hominy (108 oz)

First step:
In Medium pan, fill up half way with water. Add salt and garlic. Bring to a boil in high heat. Once boiling, lower to medium heat. Add chile pods and boil for 25 minutes. Turn off heat and let it sit for until cool. Once cool, put soften chile pods (without stem) and garlic cloves in blender. Add 2 cups of water cooked with chile and blend well. Once blended, use a strainer to pour chile mixture (it will be very thick) into a bowl. Making sure none of the seeds and pulp go through. You will have a watery mixture when done. Set aside.

Second step:
In Large pan, fill up half way with water and bring to a boil in high heat. Once boiling, lower to medium. Add all meat, garlic, whole onion and salt. Cook for 1 ½ hours. Add watery chile mixture and hominy into pan. Cook for an additional 30 mins. Done!

My grandmother taught me to cook at a very young age. She never measured anything. She would add a bit, then taste. I learned that same technique too. My kids told me I needed to start writing all my recipes down so I can pass them on to my children and grandchildren. This is the very first one I actually "write" step by step. I hope you enjoy it.
