Ingredients:
Ingredients:
1 lb black eye peas
1 small onion chopped
1 package of salt pork cut in 1 inch chunks or the ham bone from Christmas dinner
Pepper to taste
Enough water to cover beans.

Stewed Tomatoes
1 16oz can dice tomatoes
1 can tomato paste
1/2 C water
1 tbsp Sugar
1 slice of Bread torn into small pieces
2 tbsp Flour and 1/3 C water to thicken. Guessing on measurements.

Directions:
Directions:
Soak Beans overnight in a large bowl of water. They will get bigger and absorb a lot of the water.
Rinse beans and drain. Put in a large pot with the water, onion, salt pork or ham, and pepper. Simmer for about an hour or until beans are soft and most of liquid is absorbed. May need to add more water a little at a time.

For tomatoes:
Add all ingredients except flour and water, in a pan. Simmer until hot. When bubbly mix flour with cold water. Than slowly add to tomatoes to thicken them a bit. Use as much as you need.
