1 c. blueberries, fresh or thawed
3 ripe medium bananas, mashed
2 T unsweetened apple sauce
1-1/4 c. whole wheat or gluten free flour
¾ t. baking soda
¼ t. salt
2 T butter or Earth Balance, softened
½ c. light brown sugar, packed
2 large egg whites or egg substitute
1 t. vanilla extract
½ to 1 c. walnuts, chopped large
baking spray

1. Preheat oven to 350. Lightly spray loaf pan with baking spray.
2. In medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside.
3. In a large bowl, cream butter and sugar with electric mixer.
4. Add egg whites, bananas, applesauce and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.
5. Add flour mixture and blend at low speed until combined; do not over mix.
6. Fold in blueberries and pour batter into prepared loaf pans.
7. Bake in center rack for approx. 50 to 55 minutes or until toothpick inserted comes out clean. Cool for 20 minutes before slicing.
