3 eggs beaten until foamy
1 cup oil
1 cup of sugar
2 cups grated zucchini
2 tsp. vanilla
1 tsp. salt
3 cups flour
1 tsp. baking soda
1 cup chopped nuts

Directions:
Directions:
Preheat oven to 350 degrees.
Grease two 9x5 loaf pans.
Combine in large bowl: flour, sugar, baking soda, and salt.
Add beaten eggs, oil, and vanilla and mix well.
Stir in the zucchini along with its liquid.
Fold in the chopped nuts.
Pour the batter into the pans.
Bake one hour or until inserted toothpick comes out clean.
Cool the pans on a rack for ten minutes.
Remove from pans and cool completely.
Store wrapped in foil or in plastic baggie.
