2 cups flour plain or whole wheat
1 cup water
1/2 teaspoon salt optional

Place pizza stone in oven. Pre heat to 500 degrees for about 45 min. You get oven needs to be hot. ( No pizza stone set a large baking sheet on a rack and heat until oven is hot)

In large bowl mix 2 cups flour with 1 cup water.

Stir vigorously with a wooden spoon for about 1 minute, until dough is elastic. Add more flour if needed ; dough should be a little sticky.

Pull off a scant fist size ball and make a ball.

On a floured surface, roll the ball with a rolling pin until 1/8 inch thick or use hands to pat and stretch the dough. More fun to stretch !

Prick the entire surface with a fork. This prevents the dough from rising. Slide on pre heated pizza stone or bake directly on oven rack using parchment paper.

Bake for about 5 min. or until browned. When don, remove the matzo and place on cooling rack. Like all bread matzo best when fresh. Enjoy.
