1/4 cup extra-virgin oil
2 teaspoons minced garlic
Juice and zest of 1/2 lemon
2 lbs asparagus, trimmed
1 cup goat cheese, crumbled

1. Preheat the oven to 425ºF

2. In a small saucepan over medium heat, heat the olive oil. Heat the garlic, lemon juice, and lemon zest in the oil until the garlic is lightly caramelized, about 5 minutes

3. In a large bowl, pour the olive oil mixture over the asparagus, and toss to coat

4. Arrange the olive oil on a baking sheet, and sprinkle the goat cheese evenly over the vegetables

5. Roast the asparagus in the oven until tender, about 10 minutes, and serve
