1 stick of butter
1/2 - 3/4 cup flour
2-3 cups milk
4 packages of Buddig thin sliced beef-chopped in small pieces
salt & pepper to taste

Directions:
Melt butter in a large deep skillet. Slowly add the flour, stirring constantly. Add enough flour to completely absorb the butter. It will look crumbly in the pan. Slowly begin adding the milk and whisk continuously to blend the flour (rue) mixture and milk into a silky smooth gravy. Let this mixture come to a boil and then turn down the heat and simmer for 10-15 min. Keep checking it and stirring it to keep it from burning on the bottom. It will thicken as it cooks. Add the chopped beef, stir till blended. Cover and simmer for another 20-30 min.

* If it isn't thickening enough, remove 1/2 cup of the gravy(no meat), add flour till it becomes thick & stir it all back into the original gravy.
Serve over boiled, cubed potatoes.

This is the one meal that I do not have a written recipe for. I make it as I go. I've included all the steps - it's really about tweaking it as you go. You may need less or more of the flour and milk.
