½ Cup Flour
1 Teaspoon baking powder
1 Dash salt
10 large eggs
½ cup butter or margarine, melted
2 cups low fat cottage cheese
1 pound shredded Monterey jack cheese
8 ounces chopped canned green chilies




Directions:

Appetizer: 100 squares
Prep time 1 hour, 20 minutes
Preheat oven to 400’F

Combine the dry ingredients in a small bowl.
Beat the eggs together in a medium mixing bowl.
Gradually whisk in the flour mixture. Add the remaining ingredients and mix well.
Pour into a 9”x13” pan which has been sprayed with nonstick spray.
Bake at 400’F for 15 minutes and reduce the oven temperature to 350’F and bake for 30-40 minutes longer until set in the center.
Cool slightly and cut into squares. This is best served still warm but can be chilled and served cold.
I use either Eggbeaters or Eggland Best eggs in this recipe.
Freezes well.
