˝ cup finely chopped onion
1 Tbsp.butter
1 6˝ oz. can tuna,water packed,drained and flaked
1 cup shredded zucchini
2 eggs,lightly beaten
⅓ cup minced fresh parsley
1 tsp.lemon juice
˝ tsp.salt
⅛ tsp. pepper
1 cup seasoned bread crumbs,divided
2 Tbsp.canola oil

Directions:
Directions:
In a small saucepan, sauté onion in butter until tender. Remove from heat. Add tuna, zucchini, eggs, parsley ,lemon juice, seasonings and 1/2 cup bread crumbs. Stir until well combined. Shape into six 1/2-in.- thick patties; coat with remaining bread crumbs.

In a large skillet,heat oil. Cook the patties for 3 minutes on each side or until golden brown.
