1 10oz. frozen chopped spinach, slightly cooked, well drained
3 eggs beaten
1 pint small curd cottage cheese
1 T flour
1/2 stick oleo or butter
1/4 lb. mozzarella cheese
1/4 lb. cheddar cheese
8 oz. pkg. pepper jack cheese (optional to add flavor)

Directions:
Directions:
Melt butter or oleo and combine with flour. Mix eggs, spinach, cottage cheese and other cheeses. Pour into buttered casserole dish. Bake at 350º for 1 hour.
