6-9 -pork chops (not to thick, boneless works better)
2- eggs
4- tbsp. water
2- cups flour
1- tsp. salt
1- tsp. black pepper
1- tsp. garlic powder
Canola or vegetable oil for frying pork chops
GLAZE:
1 1/2 -cups honey
1/2 -cup brown sugar
1/2- tsp. ginger
Dash of cayenne pepper to taste
1/2 - soy sauce
1- tbsp. chopped garlic
2- tbsp. butter

Whisk eggs and water together in a shallow bowl. Mix flour salt, pepper, and garlic powder in another dish.
Dip pork chops in flour then in egg. Then back to flour mixture again. (This is what puts the extra crispy coating on the chops. Be sure to get plenty of flour on chop on the last coat.) Shake them a little and place in pan with about 1/2 " oil. (Be sure oil is hot, but not to hot or chops will cook too fast. Turn over to the other side and turn down to medium. Cook 6 minutes. on each side. Remove form pan to a 9 x 13 baking dish.
Sauté the garlic in a little butter. Add honey, soy sauce, brown sugar, cayenne and ginger. Bring to a boil then reduce to low and simmer for 5 minutes. Watch carefully.
Pour 1/2 glaze over chops. Flip over and coat other side with rest of glaze.
Place uncovered in oven for 20-25 minutes. (this sets the glaze and finishes them to be sure they are cooked through.
