Mom's Sweet Potato Pie Recipe

4-5 large sweet potatoes
1/2 c. (1 stick) butter, melted
4 eggs
1 c. brown sugar
1 1/2 c. granulated sugar
1 tbsp. lemon extract
1 tsp. nutmeg
1 tbsp. cinnamon
1/2 c. CarnationŠ milk
2-3 frozen (shallow) pie shells

Directions:
Bring a large pot of salted water to a boil. Add the sweet potatoes. Reduce heat and cook until the sweet potatoes are tender when pierced with a fork, about 30 minutes. Drain and run under cold water until cool enough to handle. Peel the sweet potatoes and place in a medium bowl.

Mash sweet potatoes until smooth. Set aside.

Preheat the oven to 400°F. Bake the pie shells until lightly brown, about 15 minutes.

Mix the mashed sweet potatoes, melted butter, brown sugar, granulated sugar, eggs, CarnationŠ milk, cinnamon, and nutmeg in a bowl, using an electric hand mixer. Add vanilla and lemon extract and mix. Pour mixture into the partially baked pie shell.

Bake the pies at 350°. Bake about 1 ˝ hours. Cool completely on a cooling rack.

Excess pie filling (or pies) can be frozen for future use.
