1/3 cup sugar
1/2 cup sifted flour
1/4 tsp salt
3 cups milk
1 pkg Baker's coconut
2 egg yolks slightly beaten
2 tsp vanilla
1 tsp butter
1 baked 9 inch pie shell

Directions:
Directions:
Combine sugar, flour and salt in double boiler. Add milk and stir until combined. Add 1 cup coconut. Cook 15 minutes, stirring constantly. Mix small amount with egg yolks, (to temper?) and add egg mixture to double boiler. Cook 2 minutes. Add vanilla and butter. Cool and turn into pie shell.
Spread with meringue made with 2 egg whites and 1/4 c sugar. Sprinkle with remaining coconut. Bake at 350 degrees for 15 minutes.

I barely remember Mom making pies. Maybe just for big meals like Thanksgiving. Didn't appreciate the coconut pie back then.....what do children know???? I think Grammy would frequently bring a pie to Thanksgiving meals - anyone remember what kind?
