Mom's Strawberry Pie Recipe

9" baked pie shell
1 qt strawberries
3/4 c sugar
2 tbsp cornstarch
1/4 tsp salt
1 c water

Directions:
Directions:
Stem 1 qt strawberries. Wash and drain. Don't slice!

Add to pan: sugar, cornstarch salt and water. (Do not add strawberries) Mix and cook until thickened. Add red food coloring as desired. Let cool.

Put whole berries in cooked pie shell and pour cooled mixture over top and refrigerate. Top with whipped cream.. Mom added "I put my berries in mixing bowl and poured mixture over them and THEN added to pie shell. Coats berries better".

Mom would always make this pie and take it to the cabin on Kentucky Lake. We'd pick up pulled pork in Wickliffe for sandwiches and have the pie for dessert. I know she made it many times for the family at home also. One of my favorites.
