5-6 large yams (2 1/2 pounds), parboiled and peeled or one 40 oz. can
3 tbsp. brown sugar
4 apples, peeled, cored, sliced into 1/4 inch rings
3 tbsp. lemon juice
4 tbsp. cinnamon-sugar mixture
2 tbsp. honey

Slice yams 1/2 inch thick and place slices to form a layer on the bottom of a buttered casserole dish. Sprinkle with brown sugar. Make a layer of apple rings and sprinkle with lemon juice and cinnamon-sugar. Continue making layers in the same fashion ending with apple rings. Drizzle top with honey and sprinkle with cinnamon-sugar. Bake covered at 350º for 30 minutes. Uncover and bake until top layer is browned and soft.

To prepare in advance, bake for 20 minutes. Refrigerate or freeze and when ready to serve (defrost), heat covered in a 375º oven. Uncover and bake until browned.
