2 boneless pork chops, cubed (or Savoie's® Tasso or meat of choice)
1 tbsp. olive oil
1 (15 oz.) can fire roasted chopped tomatoes
2 (14.5 oz.) cans fat free, no-salt added, chicken broth
2 tbsp. dried minced onion ( or fresh if available)
1 (15 oz.) can great northern beans, drained & rinsed
6 oz. baby spinach leaves, tear if large

Directions:
Directions:
Sauté pork until browned on all sides. Add tomatoes, broth, onion and beans. Bring to a boil, lower heat and simmer for 15 minutes.
Add spinach. Cook 2 minutes more. Top with grated Parmesan cheese.
Serve with crusty bread for dipping.
