Rhubarb Rolls Recipe

3 c. finely chopped rhubarb
1 c. sugar
1/2 tsp. cinnamon
2 c. flour (I always add a little more)
3 tsp. baking powder
1/4 tsp. salt
1/2 c. butter
3/4 c. milk

for syrup:
1 c. hot water
1 Tbsp. butter
1 c. sugar
6-8 drops red food coloring

Directions:
Directions:
Mix the first 3 ingredients together and set aside. For syrup, mix the ingredients in a small saucepan over med-high heat until sugar dissolves. Set aside. Combine flour, baking powder, and salt. Cut in butter and add milk. Don't over mix.

Roll out dough on floured board. Spread Rhubarb mixture on dough and roll tightly. Cut with a string like cinnamon rolls and place in a 9x13 pan. Pour syrup over rolls and bake at 350º for 40 minutes. Serve with ice cream or whipped cream.
