2 c. milk, scalded and cooled
2 eggs
4 Tbsp. shortening
1/2 c. sugar
2 tsp. salt
2 Tbsp. yeast
1/2 c. warm water
7 c. flour

For Orange sauce: 1 cube margarine, 1 c. sugar, 3 oranges juiced, grated rind of one orange

For cinnamon rolls: butter, cinnamon, sugar

Glaze for cinnamon rolls: powdered sugar, milk, butter

Mix yeast and water in a small bowl and set aside for 5 minutes. In a large bowl, cream eggs, shortening, sugar and salt together. Add scalded milk (cooled). Add yeast mixture. Add flour, enough to make a soft dough.

Let rise to 2X size, shape, rise again (2X size). Bake at 375º for 18-20 min. Rub butter over the top as soon as they come out of the oven

For Orange Rolls: Boil orange sauce ingredients to make syrup. Pour over rolls when they are just put into pan, before they rise for 2nd time.

For Cinnamon Rolls: After dough has risen the first time, roll it into a large rectangle. Spread melted butter over dough and sprinkle heavily with cinnamon and sugar. Roll tightly. Cut pieces about 1" thick with a string. Place on cookie sheet with an inch between rolls. Let rise again, and bake. Cover with glaze while still warm.
