2 lbs. small red potatoes, unpeeled
1/3 cup red wine vinegar
2 tbsp. vegetable oil
2 tbsp. olive oil
3 tbsp. fresh dill, chopped
½ to 1 tsp. salt
½ tsp. pepper
1 large red bell pepper, chopped
1 cucumber, chopped
½ cup green onions, sliced
1 - 4 oz. package feta cheese, crumbled

Directions:
Cover potatoes with water and bring to a boil. Cook 25 to 30 minutes or just until tender; drain and cool. Cut potatoes into quarters. Whisk together the next six ingredients. Pour over warm potatoes. Stir in bell pepper, cucumber, and green onions. Add feta cheese and gently toss to coat. Cover and chill at least two hours before serving.
