1/2 cup softened margarine
1 cup flour
1/2 cup finely ground cashews
1 cup powdered sugar
1 pkg. (8 oz.) cream cheese, softened
1/2 cup whipping cream
2 pkg. instant lemon pudding mix
3 cup milk
1 T grated lemon peel
1/4 cup chilled whipping cream

Directions:

Mix margarine, flour and cashews; press into a 9 x 13 inch pan and bake at 325º for 15 minutes. Cool. Beat powdered sugar and cream cheese until fluffy. Beat 1/2 cup whipping cream. Prepare pudding with milk and blend 3 mixtures together. Spread on cooled crust. Refrigerate 24 hours. Whip remaining 1/4 cup whipping cream and spread on dessert sprinkling with lemon peel before serving.
