1 cup warm water
1 tsp. dry yeast (1 Tbsp. = 1 cake yeast)
1/2 tsp. salt
1 tsp. sugar
1/2 tsp. cider vinegar
3/4 cup soy flour
1/4 cup gluten flour
1 1/4 cups whole wheat flour

Standard Small Bread Pan ( 4 3/8 x 3 5/8 x 2 1/4 inches)

Pour water into mixing bowl. Sprinkle dry yeast on water and let stand til dissolved. (5 min.) Mix in dry ingredients plus vinegar. Sift thoroughly the soy and gluten flours together, add flour mixture, then whole wheat flour. Mix slowly until dough stiffens. Knead lightly in flour on a board till dough feels elastic and smooth. Grease pan with non stick vegetable spray. Shape dough in bread pan - let rise about 2-3 hours. Set oven to 325º - bake bread for about 1 hour or until well browned. Home-baked bread is denser than commercial, so cut thin slices - then toast. Keep in refrigerator.

This is another one of Mama's recipes she had hand written on card stock paper. It was in her cookbook and was definitely used. She loved to bake bread and try new recipes that were healthier and more to her and Daddy's needs as their years went by and health issues begin to plague them. She was always looking for ways to help them stay in better physical shape and feel better. She read a lot about the medical issues that they and we, her children, were facing. Whatever she could do to encourage better health she would try. And since she baked bread so much and it was always such a treat, she used new and different recipes to help with all that. This was one of those recipes. Sounds good - enjoy! and remember Mama is smiling down on you for following her lead in pursuing good health.
