1/4 tsp olive oil
1 medium yellow onion
4 - 6 slices of bacon
1/2 to 1 lb of thin slices round steak
Cooking string or tooth picks
Root veg. Of your choice
Idaho potatos

Directions:
Cut round steak in half lengthwise. Place bacon strips (uncooked) on top of each piece of meat. Cut onion in half and thinly slice each half of onion. Place enough slices on top of bacon. Starting from the smaller end of each piece of layered round steak, roll into log. Secure log with string tied around log or 2 - 3 toothpicks in each rolled bird. Place oil in skillet heated on med-high and brown all sides of the birds. Remove birds when lightly browned and set aside. If using Crock-Pot, layer bottom of pot with a root vegetable (carrots, rudebaga, sweet potato cubed, celery, beets, or Idaho potato cubed).
Add browned birds on top of vegetables/Potato layer. Pour 1 cup of water in Crock-Pot and cook on low for 6 hours. Serve as meal.
If cooking on stove top, drain oil from skillet, add 1 cup of water and simmer for 3-4 hours. Cook potato and vegetable separately and serve as total meal.

This recipe was from my grandmother. My kids have always loved when I make it. The first time I made Birds for Marty, he was appalled! He thought I was serving him Blue Birds! That's the Irish for ya!
