1 C. Krusteaz Light & Fluffy Buttermilk Pancake Mix
2/3 C. Water (or milk)
1/4 C. Fresh Blueberries (or Huckleberries)
1 Tbsp. Butter
Favorite Syrup or Jam

Directions:
Mix dry ingredients with wet ingredients in a bowl until it becomes the consistency of pancake batter. Add blueberries and stir a little more. Cook on medium high heat until bubbles form, and pop, in the pancake batter, then flip the flapjacks and cook the other side. When both sides are fully cooked, the flapjacks should be deliciously golden brown. Butter when hot. Top with favorite flavor of syrup or jam.

Flapjacks may be cooked in any creative shape you'd like. Mickey Mouse, the Nike Swoosh, Spongebob and a bullseye target are my personal favorites. Massive, plate-sized pancakes, or even bigger, are sometimes yummy too (think of the movie Uncle Buck). Huckleberries may be substituted for blueberries, but the addition of pineapple chunks or peas is not advisable. For best results, serve with a side of scrambled eggs and bacon, and a large cup of orange juice.

If more flapjacks are desired, add more dry and wet ingredients. . . and berries. . . and butter, syrup or jam, proportionately.
