6 Medium Potatoes
Milk and Butter for mashing
1/2 c. Sour Cream
3 oz. Cream Cheese
Salt and Pepper to taste
Chives or Parsley if desired

Directions:
Directions:
Peel potatoes and cook until done. Mash with enough milk and butter to make light and fluffy. Stir in remaining ingredients except for chives or parsley.

Place in greased 1-1/2 qt. casserole. Dot with butter. At this point, the casserole may be refrigerated or even frozen.

Bake at 350º for 30-40 minutes or until heated through. Garnish with chives or parsley.

To make potatoes ahead of time, this really works. The mashed potatoes taste fresh.
