For the crust:
1 1/2 c. Flour
1/2 c. Veg. Oil
1 tsp. Salt
2 T. Milk
1 1/2 T. Sugar

For the glacé:
1/2 c. Sugar
2 T. Cornstarch
1 1/2 c. Water
1 3oz Strawberry Jello (sugar free works)

Whip cream

Directions:

Put all of the crust ingredients into a 9" pie pan. Mix well with a fork until it all comes together. Pat into the pan and bake at 425º oven for 10-15 minutes, until slightly browned.

Let cool and arrange clean strawberries (standing up close together, or sliced) on the cooked crust.

In a saucepan mix the sugar, cornstarch and water and bring to a boil over medium heat, stirring constantly until it thickens and turns clear. Take off heat and stir in the jello until dissolved. Cool slightly and then spoon the glacé over the berries, covering completely.

Refrigerate and serve with whipped cream. Enjoy!

This has been my favorite summer dessert recipe since the Eighties:) It is always a hit! You can use whatever fresh fruit is in season... Raspberries with raspberry jello, peaches with peach jello, etc.
