Mother Ruth's Spaghetti Recipe

1 lb spaghetti pasta
1 green pepper, diced
1 medium onion, diced
1/2 pound of bacon, sliced
1 can of diced tomatoes
2 T sugar

Directions:
Directions:
In large skillet, fry bacon until almost crisp and fat rendered. Remove bacon from skillet but leave bacon fat. If too much - pour out all but 2 T of fat. With heat on medium high, add green pepper and onion and saute until tender. Remove from heat. Meanwhile add pasta to boiling salted water and cook about 6 minutes until al dente. Drain. Put bacon bits back into green pepper/onion mixture and heat through. Add tomatoes with juice and stir. Add 1-2 T sugar and salt and pepper to taste. Pour mixture over hot pasta and mix.

Mom made this frequently. I asked the origin of the recipe and she told me that Mother Ruth had made this for the farm hands because it was easy and fast and could be made in abundance.
