1 c vanilla unsweetened almond milk
1 c plain low-fat Greek yogurt
2 T pure maple syrup + 4 t for serving
1 t vanilla extract
1/8 t Kosher salt
1/4 c chia seeds
1 pint chopped strawberries
1/4 c sliced almonds, toasted

In a medium bowl, gently wisk the almond milk, yogurt, 2 T syrup, vanilla, and salt until just blended. Wisk in the chia seeds. Let set for 30 mins. Stir to distribute the chia seeds if they have settled. Cover and refrigerate overnight. The next day, in a medium bowl, toss the strawberries and the remaining 4 t of syrup. Mix in the almonds. Portion the pudding into 4 containers and mound the strawberry mixture on top.
