Yummy Zuccchini Bread Recipe

3 cups shredded zucchini
1 and 2/3 cups sugar
2/3 cup vegetable oil
2 tsp vanilla
4 eggs
3 cups flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg1/2 tsp baking powder
1/2 cup raisins

Grease bottoms of 2 loaf pans

Mix zucchini, oil, sugar, vanilla and eggs in a bowl.

Stir in remaining ingredients.

Pour in pans and bake @ 350 degrees for 45 - 60 10 minutes. let cool 10 minutes. loosen sides and remove completely before slicing.
