1 cup craisins
3 large apples (organic gala), peeled and cubed
1/2 cup walnuts, chopped
2 stalks celery, finely chopped
2 large carrots, chopped finely or grated
1 1/2-2 cups quinoa, cooked
1/3 cup Tofutti sour cream or 1/2-3/4 cup Hampton Creek Just Mayo mayonnaise substitute(found where you buy mayo)
2 Tbsp lemon juice
blue agave or stevia to sweeten to your liking

Directions:
Directions:
Combine the craisins, apples, walnuts, celery and carrots in a large bowl, add the cooled quinoa.
In a separate bowl, combine sour cream or mayo substitute, lemon juice and the sweetener of your choice. Pour the liquid mixture over the salad. Toss lightly until well blended. Chill well before serving:)
