6 medium potatoes, peeled, sliced thin
1/2 cup water
2 tsp. salt
1/3 cup butter
1/3 cup flour
1/4 tsp. pepper
3 cups scalded milk
1/2 cup onion, chopped
1/4 lb. sharp cheese, shredded
1 cup buttered soft bread crumbs

Directions:
Directions:
In a large stock pot, place potatoes, water and 1 teaspoon salt. Cover and bring to a boil. Lower heat and cook for an additional 10 minutes; drain. Melt butter, then blend in flour, 1 teaspoon salt and pepper. Add milk and cook; stirring constantly until thick and creamy. Stir in onions, cheese and potatoes. Turn into a greased casserole dish and top with bread crumbs. Bake in a preheated 350º oven for 30 minutes.

This recipe was passed down to mom from her Aunt Gertie. They are so rich and creamy that mom would make them for almost every holiday!
