2 C chopped Zucchini
1 C diced tomatoes
1/2 C chopped onion
1/2 C Parmesan Cheese
1/2 C shredded Monterey Jack Cheese
1 1/2 C Milk
3/4 C Bisquick
3 Eggs
1/2 tsp Salt
1/4 tsp Pepper

Directions:
Directions:
Bake 400º for 50 minutes
Grease 9 inch pie plate. Spread zucchini, tomato and onion in pie plate. Sprinkle both cheeses over veggies. In a bowl, beat eggs, milk, Bisquick, salt and pepper. Pour over vegetables. Bake until knife comes out clean. It will be lightly brown.
