2 cups unbleached, all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup sugar
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 tablespoon grated orange peel
2 tablespoons shortening
1 egg, well-beaten
1 1/2 cups fresh or frozen cranberries, coarsely chopped
1/2 cup chopped nuts (walnuts or pecans)

Preheat oven to 350. Grease a 9 x 5 inch loaf pan.

Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix by hand until all dry ingredients are incorporated. Stir in cranberries and nuts. Spread mixture evenly in the loaf pan.

Bake for 55 - 60 minutes or until a cake tester inserted in the center comes out clean. Cool on a wire rack for 15 minutes. Remove from pan and cool completely. Tastes best when you wrap and store overnight.

My kids love this............so much so that they wouldn't usually allow me to wrap and store overnight. I got this recipe from the mother-in-law of one of my best friends in college. Mrs. Warren grew up on Cape Cod and I visited her family there. She used to mail these cranberry breads to us at college. They travel well!
