◾8 slices bacon, cut into 1-inch pieces
◾2 C. frozen hash browns, thawed
◾1/2 lb. fresh mushrooms, roughly chopped
◾1 green bell pepper, chopped
◾1 red bell pepper, chopped
◾1 small onion, chopped
◾12 eggs
◾1/3 C. sour cream
◾8oz cream cheese
1 cup sharp cheddar

Grease 13x9 casserole dish.
In a large skillet, cook bacon until crisp. Drain all but two tablespoons of grease from the skillet and set aside bacon.
Add potatoes, mushrooms, peppers, and onions to the skillet and saute for 10 minutes in bacon grease..
Gradually stir in the cheeses.
Once melted and combined, transfer mixture to your prepared casserole dish.
In a medium bowl, whisk together eggs and sour cream. Fold in bacon and pour mixture on top of cheesy filled baking dish.
You can cover and refrigerate overnight or cook right away.

Preheat oven to 350F and bake for 40-50 minutes. Let stand 10 minutes before serving.
