1 pound lean ground beef or ground turkey
1 large onion, chopped
1 can (14.5oz) diced tomatoes with basic, garlic and oregano
1 can (6oz) Tomato Paste
12 ounces uncooked penne pasta, prepare according to package directions
3 cups (12oz) shredded mozzarella cheese, dividedC

1. Cook ground beef and onion in a large skillet. Drain fat. Stir in diced tomatoes and tomato paste and 1/2 c. Water. Season to taste and heat through.

2. Cook pasta according to package directions.

3. Coat a 13X9X2 inch baking dish with cooking spray. Combine cooked pasta with meat-tomato sauce mixture, and 2 cups mozzarella cheese. Pour into baking dish; top evenly with remaining cheese.

4. Bake uncovered in a preheated 350 degree oven for 20-25 minutes or until heated through and cheese is melted
