1 leg of lamb
8 cloves of garlic
1 sprig of rosemary
3 tbsp of curry powder
1 tbs of brown sugar
¼ tbsp of salt
¼ tbsp of pepper
1 tbsp of olive oil

Directions:
Directions:
1. Preheat you oven to 450º.
2. Get together your mise en place.
3. Place lamb on a rack in a roasting pan.
4. Cut the garlic cloves into quarters.
5. Pierce the meat at least 10 pierces.
6. Mix together your salt, pepper, curry powder, and brown sugar.
7. Take three rosemary needles, and one quarter of garlic and stick them into the piercings of the meat.
8. Now grab your olive oil and rub it all over the lamb.
9. finally take the spice rub that you made earlier and rub it all over the lamb.
10. Put the lamb in the oven for 20 minutes and then reduce the heat to 400º for 1 hour. The intern temp should be 145º.
11. take the leg of lamb and let it rest for 10 minutes. then carve.
