CARROT CAKE

1 Cup Wesson Oil
2 Cups Sugar
4 Whole Eggs
2 Cups Flour
2 Teaspoons Baking Powder
2 Teaspoons Soda (I have cut this to about 1 ½)
1 Teaspoon Cinnamon (heaping)
Pinch of Salt ( I do not do this)


ICING
1 8 OZ. Pkg. Cream Cheese
1 1lb box powdered sugar
½ Cup butter
1 Teaspoon vanilla
¾ Cup nuts (pecans)( You can chop or place pecan halfs on top)

Blend oil, sugar and eggs. Sift dry ingredients and gradually add. Then add 3 cups grated carrots and 1 cup nuts (pecans). Bake in 3 layers at 350% 20 or 25 minutes. I sometimes bake in 9X12 single layer. One hour for single layer.
