2 lbs. Northern Beans
1/4 tsp. baking soda
1 3/4 cup dark brown sugar
1 Tbsp. salt
1/2 to 1 lb. bacon (I use the whole pound)

Step 1: Rinse 2 lbs. of Northern Beans, cover with water, add ¼ tsp. baking soda. Let soak for 1 1/2 hours.
Step 2: Put on par boil in the same water and boil 5 minutes. Pour off liquid and add cold water to cover beans. Bring to a boil then turn heat to low for 3 hours with cover on.
Step 3: Do not drain the beans, pour beans and liquid into a large roaster. Add 1¾ cup dark brown sugar, 1 Tbsp. salt and 1/2 to 1 lb. bacon cut up into small pieces. Stir well and back uncovered for 3 hours in 350º on the middle rack. You want them well covered with the liquid so they are runny (add more if necessary during the 3 hours).

Tips: Original recipe called for uncooked bacon. I cut mine up into small pieces with scissors, cook it about 50% of the way and then add to beans (discarding all the grease). I normally have to add more water while they are in the oven. I like to make the day before and then just reheat the day of the party.
