14 oz. Polska Kielbasa sausage link package
1 sweet onion
1 green pepper
1 package fresh mushrooms
1 tsp. crushed garlic
1 tsp. ginger
Olive oil
Red pepper flakes to taste
2 tbsp. minimum prepared Hoisin sauce
Mirin (Japanese rice wine/very low alcohol content) to thin
White Japanese sticky/sushi rice

Directions:
Start white Japanese sticky/sushi rice in rice cooker or on stove top. Slice the Polska Kielbasa sausage link diagonally into 1/4 in. wide pieces. Cut the sweet onion in half and then into wide slices, separating the pieces from each other. Slice the green pepper into thin slices lengthwise. Slice the mushrooms.
Heat a cast iron pan and add oil, garlic, ginger and red pepper flakes, stirring often. Add sausage slices and cook until well done. Add onion and cook until the onion is semi-transparent. Add the green pepper and continue to stir until the pepper is cooked, yet still crunchy. Add Hoisin sauce to mixture to taste, and then dilute with Mirin to smooth consistency, not too thick.
Plate the rice first and cover with the sausage mixture and serve immediately.

The Hoisin sauce tends to get very thick when placed in the pan with the other ingredients and the Mirin is used as a dilution agent. Christine and I enjoy it best when the sauce is thinner and covers the rice more thoroughly.
