Chicken Biscuit Casserole Recipe

3 C (approx.) cooked, shredded chicken. (2 large breast should do it)
1½ C chicken broth or stock (I use 2 Cups because MawMaw likes it that way)
1/4 C butter, melted
2 C Bisquick
1½ C milk
1 can cream of chicken soup
1½ C frozen mixed veggies (I eyeball it. We like more veggies)
3 Chicken Bouillon cubes
Pepper or spices of your liking

Preheat oven 350° Spray a 10x10 baking pan (you could use a 9x13 ... I like the 10x10, 3qt one) set it aside.

In a small sauce pan, warm the chicken stock and add the bouillon cubes to dissolve. Add the can of cream of chicken soup and whisk to get all lumps out. Add some black pepper or season salts to this mixture and keep it warm.

Melt butter and pour into the 10x10, or 9x13 pan.
Layer the shredded chicken on top of the butter.
Sprinkle frozen veggies on top of the chicken.

In a small mixing bowl, combine the milk and Bisquick. (It's ok that it is lumpy)

Pour over the chicken and veggies.... DO NOT STIR OR MIX!
Pour the Chicken soup/stock mixture over .... again DO NOT STIR OR MIX! It will look like a soupy, sloppy mess. Its supposed to look like that!

Carefully put it in the oven and bake about 45-1hr. Until the top is brown and bubbly. Remove and let it rest 5 minutes.

This is MawMaw's absolute favorite! It is more like a chicken pot pie than a casserole. You could adjust the amounts of chicken and veggies.... I like it with more juice so I go heavy on the broth.
