Ingredients: 12 oz. fresh blackberries 1 cup heavy cream 1 cup sugar 1 egg, beaten 1/3 to 1/2 cup cornstarch 1 pie crust

Directions:Preheat oven to 400º F. Mix heavy cream, egg, sugar, and cornstarch in large bowl. Add blackberries and gently mix. More cornstarch may need to be added depending on the consistency of the mixture. Pour mixture into pie crust and bake at 400º F for 15 minutes. Reduce the temperature to 350º F and bake for another 45 minutes. Allow pie 1 hour to cool and set before serving. |

Notes: Along with the Dutch apple pie, my grandmother also taught me to make this blackberry pie. I always enjoyed making this pie for two reasons; the first because grandma would take my brother and I to pick the blackberries to use in the pie, and the second reason was because it is so easy to make but so delicious. My Aunt Kate and I have been working for years to try to perfect the consistency of the pie. You never know how juicy your berries will be so guessing how much cornstarch to add is tricky. All we know is sometimes a 1/3 of a cup works and sometimes it doesn't. I have also been informed that this pie is a "birthday pie" because my Aunt Kate always orders it for her birthday, so obviously making this pie has special meaning to me.
