1 large or 2 small boxes apricot jello
2 c. boiling water
1 tray ice cubes
1 pint apricots (reserve juice)
Whipping cream, whipped
opt: chopped walnuts

Directions:
Directions:
In a bowl, add boiling water to jello. Stir until jello is dissolved. In a blender, mix Jello, 1 tray ice cubes, and 1 pint apricot halves (or a 14 oz can). Don't forget to reserve the juice from the apricots. Pour the jello/apricot mixture into a dish and refrigerate.

Topping: thicken the apricot juice with a cornstarch and water mixture. Cook until thick. Cool. Add whipped whipping cream and spread over the jello. Sprinkle with chopped nuts if desired.
