Dressing:
1 c. sugar
1/4 c. oil
3/4 c. apple cider vinegar
Pepper to taste

3 green peppers, diced
2 red, yellow, or orange peppers, diced
2 bunches green onions, sliced
2 stalks celery, sliced
1/4 c. chopped cilantro
1 (16 oz.) pkg. frozen corn
2 cans black-eyed peas, drained and rinsed
1 can black beans, drained and rinsed
1 (4 oz.) can diced jalapenos--I just add 1/2 the can

Directions:
Directions:
Mix the first 4 ingredients together for dressing in a saucepan, heat to dissolve sugar and set aside to cool.

In a large bowl, mix the remaining ingredients. Pour the dressing over the top and stir all together. Serve with corn chips.
