Quinoa Burgers Recipe

2 cups cooked red quinoa (or regular)
1 cup cannellini beans, mashed (or northern beans)
1/2 cup panko bread crumbs
1 large egg, lightly beaten
1 clove garlic, grated
1 tsp chipotle chile powder
1/2 tsp salt
1/2 tsp pepper
3/4 cup sharp cheddar cheese, shredded
3 tbsp olive oil
4 hamburger buns
carmelized onions

In a bowl, combine the quinoa, mashed beans, bread crumbs, egg, garlic, chipotle chile powder, salt and pepper. Mix well to moisten the ingredients and then the cheddar cheese. Mix well again and form into 4-5 burger patties. Place on in fridge.

Carmelize onions in butter and set aside.

Heat olive oil in skillet and place burgers in skillet, cook 5 minutes each side.

Serve on bun with your favorite cheese and carmelized onions.
