1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp. vanilla
1 1/2 cup flour
1 tsp. salt
1 tsp. baking soda
3 cups quick oatmeal
1 cup nuts
3/4 cup coconut

Directions:
Directions:
Cream shortening and sugars, add well beaten eggs and vanilla. Add dry ingredients, oatmeal & nuts. Shape into loaves and refrigerate overnight. Slice thin and bake at 350º for 10-15 minutes.
