4 tomatoes, seeded and diced
2 cucumbers, peeled and diced
2 green peppers, seeded and diced
1 medium onion diced
1 can (2¼ oz.) sliced olives, drained
1 tsp. pepper

DRESSING
½ cup olive oil
¼ cup vinegar
Juice of 1 lemon about 1/4 cup
1 Tbsp. chopped fresh parsley
2 garlic cloves minced
2 tsp. chopped green onion
½ tsp. salt
¼ tsp. ground cumin

Directions:
Directions:
In 1½ qt. bowl, layer 1/3 - 1/2 of tomatoes, cucumbers, green peppers, onions, olives, salt & pepper and then repeat layers 2-3 more times. Combine all dressing ingredients pour over vegetables. Cover and chill several hours or overnight. Put dressing on just before serving.
