2 cup instant oats
2 cup all purpose flour
3 tsp baking powder
3 tsp ground cinnamon
1 cup sugar
1/4 tsp salt
4 tbsp unsalted butter, melted
2 large egg, room temperature
2 tsp vanilla extract
1/2 cup agave (may substitute honey or maple syrup)
1/2 cup raisins

Preheat oven to 325º.

Whisk together the oats,flour, baking powder, cinnamon, sugar and salt in a bowl. In a separate bowl whisk together the butter, egg and vanilla. Stir in the agave (honey or syrup). Add in the flour mixture, stirring just until incorporated. Fold in raisins.
Chill for 30 minutes.

Line a baking sheet with parchment paper. Drop the cookie dough into rounded scoops onto the prepared pan and flatten slightly.

Bake for 11-14 minutes. Cool on the pan before turning onto a wire rack.
