2 Egg Whites
1 ½ cups Light Brown Sugar, firmly packed
¼ tsp Cream Of Tartar
1⁄3 cup Water
1 tsp Vanilla

Directions:
Directions:
In the top of a double boiler, combine egg whites, sugar, cream of tartar and water. Cook over boiling water, beating constantly with a portable electric mixer on medium speed until soft peaks form, about 7 minutes. Remove from heat, add vanilla and continue to beat until frosting is thick enough to spread, about 2 minutes.

This frosting is great on any type of spice cake. Try it on the blackberry cake (recipe included in this book). Mom would make spice cake in 8x10 baking pans, cool and ice it in the pan with sea foam frosting; cut into squares and served from pan. She would also use a Bundt pan for a nicer presentation.
